The Holiday Cocktail – How to Make It

WHere is a simplified version of a cocktail found on a new menu. Designed as a large-volume prepared mix that is packed with the tastes of a holiday season, making it perfect for hosting a festive gathering. Save the extra cordial you can use for breakfast cocktails, sweets, or to mix another batch of this cocktail.

The Bikini Cocktail

Yields 10 servings

To make the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Directions

To prepare the Cordial: Put the listed ingredients inside a saucepan, heat until it reaches a simmer, agitating to dissolve. Next, turn off the heat allowing it to cool down fully. Transfer to a sealable bottle, cap it and store chilled, where it will keep for up to one month.

To make Batch Mix: Combine every spirits and syrup into one large bottle, allow it to infuse for an hour, then pass it through preferably using cheesecloth, so it's fully clarified.

To serve: Add 85ml of your cocktail base into a mixing glass filled with ice, and agitate carefully for a minute to cool it down. Pour to a chilled martini glass or a similar vessel, garnish with a few cranberries and finish by giving it a light spray of mandarin oil over the drink.
